Summer is winding down, but don't let that stop you from filling up that freezer! If you're like me, school starts and it's even more chaotic than summer break. I have one boy who is the girls' swim team manager and the other one will be playing football and will also be in the marching band. Did I mention that the band is competitive? I'm really not sure when we'll be home!
Chicken & Veggies:
Ingredients:
4 chicken breasts
15 oz. crushed tomatoes
10 oz. frozen green beans
2 c. chicken broth
1 c. sliced mushrooms
2 carrots, chopped
1 onion, chopped
1/2 tsp. minced garlic
1/2 tsp. italian seasoning
1/4 tsp. dried terragon
*1 c brown rice, uncooked
Place all ingredients, except rice into a gallon sized freezer bag. Squeeze out all extra air, seal, and freeze.
Cooking instructions:
Thaw in refrigerator. Place in crockpot. Add rice and cook, on low, for 6-8 hours.
