# Chicken and Rice Soup # crock pot

Crockpot Monday: Chicken and Rice Soup

Are you one of those people who love soups and stews no matter what time of year it is? I confess that I'm not. When it's hot out, the last thing I seem to want is a bowl of steaming hot soup. Still, summer evenings can be cool here in the north so it's always good to have a recipe at hand!

Chicken & Rice Soup:

Ingredients:
2 boxes of chicken broth
1 cup of uncooked brown rice
1 cup of water
1 cup cooked, shredded chicken
1.5-2 cups of vegetables (celery, carrots, broccoli, cauliflower, red bell pepper, and green onion)
1 teaspoon herbs de provence (sounds fancy)
salt and pepper to taste after cooking

Directions:
Chop the veggies into whatever size your family likes.  Add all of the ingredients into your crockpot.

Cook on low for as long as you can.
