Crockpot Monday: Steak Fajitas

I honestly can't believe how close we are to summer break. When this post goes live, my boys will only have 3 weeks of school left. I'm already thankful for having meals like this one in my freezer because like I mentioned last week, summer break is no longer a break for us. It's just plain exhausting and a part of me almost longs for them to be back in school, not because I don't want them around, but because it seems easier...seems...it really isn't, now that I think about it....

Steak Fajitas


Ingredients:
1 large onion, cut into 1/2" strips
1 green bell pepper, cut into 1/2" strips
1 red bell pepper, cut into 1/2" strips
2 lb. boneless, sirloin steak, cut into strips*
3/4 c water
2 Tbsp. red wine vinegar
1 Tbsp. lime juice
1 tsp. ground cumin
1 tsp chili powder
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder


Place onion, peppers and meat into gallon sized freezer bag. Mix remaining ingredients and pour over top. Remove as much air as possible, seal and freeze.

Cooking instructions: Thaw in refrigerator. Place in crockpot and cook on low 6-8 hours. Serve on warmed tortillas with our favorite toppings.
